If you're exploring the West District of Taichung, near the National Taiwan Museum of Fine Arts, there’s a small, unassuming shop that serves some of the most soulful udon I've ever had: Fukusaburo Udon (牛と烏龍麵 福三郎).


Run by a incredibly welcoming Japanese owner, this place brings the authentic "Kitakyushu Style" of udon to the heart of Taiwan.


📍 1. The Philosophy: Kitakyushu Style Udon

Inside the shop, you’ll see a sign explaining the "Kitakyushu School" of udon. Unlike the more common Sanuki udon, this style focuses on a rich, dark soy sauce-based broth simmered with beef, creating a deep and savory flavor profile.


📍 2. Taste Test: The Ultimate Tsukimi Beef Udon

I ordered their signature Tsukimi Beef Udon (Udon with raw egg and beef).


My Experience:

  • The Beef: I was shocked by the portion! These aren't thin slices; they are chunky, tender pieces of beef that melt in your mouth.

  • The Noodles: They have the perfect "Koshi" (chewiness). They soak up the dark broth beautifully without becoming soggy.

  • The Soul: The highlight is the brilliant orange egg yolk. Breaking it and mixing it into the hot broth makes every bite creamy and rich.


📍 3. The Authentic Finish: Udon + Rice

The meal comes with a bowl of white rice and a small side dish of pickled radish.



According to the Japanese tradition (especially in Kitakyushu), you should save some broth to pour over the rice at the end. It's the ultimate comfort food combination! (Note: The potato salad in the photo was shared by a friend, not part of the standard set).
